Berries make the best summer desserts. They are so plentiful and can be used in such a variety of ways. Pies, tarts, cupcakes, cakes, and the list goes on. I always love taking advantage of berries for seasonal baking. My favorite is picking them straight from the source and creating fun, festive desserts for summer entertaining.
One of my favorite classic summer desserts is a strawberry shortcake biscuit. Flaky homemade buttermilk biscuits smothered with slightly sweetened strawberries and a large dollop of soft, pillowy homemade whipped cream. Oh so delicious! They are great for entertaining, 4th of July and summer BBQs. I even love creating a shortcake bar where guests create their own shortcake for dessert. It's fun to mix it up with a variety of berries and offer several flavored homemade whipped creams. Kids can get involved too!
Homemade buttermilk biscuits
You can't have strawberry shortcake without a delicious biscuit! Biscuits use pantry staple ingredients and are simple to make. It adds a simple touch that gives that slight texture to your biscuits.
Fresh strawberries for shortcake biscuits
The star of the this dessert are the fresh, seasonal strawberries. They are simple to prep and only require two ingredients: strawberries and sugar. I recommend slicing the strawberries into about 1/4" slices. Combine with sugar in a bowl and allow to sit for about 15 minutes. The sugar will help the strawberries release all their delicious juices, and once assembled, the biscuits will absorb all that goodness. You can always make the strawberries up to a day ahead of time and refrigerate until ready to use.
Homemade whipped cream
What's shortcake without whipped cream? Scratch the store-bought kind and make homemade whipped cream. It's only three simple ingredients and takes no time to whip up. In a large bowl using a hand-held mixer or stand mixer with the whisk attachment, whisk the heavy cream, powdered sugar and vanilla on medium-high speed until soft peaks form. This will take about 3 minutes and will produce a soft, creamy whipped cream. Careful not to over mix or else it will become thick and lumpy.
Assembling strawberry shortcake biscuits
This dessert can certainly be made with biscuits that are warm out of the oven. Warm layers of biscuits with chilled strawberries and whipped cream is delicious. If you prefer to prep your biscuits ahead of time, of course you can serve them at room temperature.
Slice your biscuits in half and layer with prepped strawberries and homemade whipped cream. For an extra bonus, you can add additional strawberries and whipped cream to the top of your biscuits.

Ingredients
For the biscuits
- 1 recipe homemade buttermilk biscuits
- Coarse sugar, for sprinkling
For the strawberries
- 1 lb strawberries, sliced 1/4" thick
- 2 tablespoons granulated sugar
For the whipped cream
- 1 cup (240 ml) cold heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon pure vanilla extract
Instructions
For the biscuits
- Follow directions to make homemade buttermilk biscuits. Use a 3" biscuit or round cutter to cut biscuits. Before placing baking tray in oven, sprinkle biscuits with coarse sugar.
For the strawberries
- In a medium bowl, mix strawberries and sugar. Set aside for 15 minutes or place in refrigerator for up to 24 hours.
For the whipped cream
- In a large bowl using a hand-held mixer or stand mixer with the whisk attachment, whisk the heavy cream, powdered sugar and vanilla on medium-high speed until soft peaks form, about 3 minutes. Careful not to over mix or else it will become thick and lumpy.
To assemble shortcakes
- Slice biscuits in half. Top each bottom half with strawberries (and their juices) and then a dollop of whipped cream. Cover with top half of biscuits. Serve immediately.
