Butterscotch Ganache

Butterscotch ganache has a warm, buttery and brown sugar flavor.  It's made with just 2 ingredients in only 5 minutes.  Perfect for drizzling over cakes, pies, ice cream, mixing into your coffee or using it is as a filling for cake and cupcakes.

Butterscotch can be such an underrated flavor.  It's definitely unique, but it's warm, buttery and brown sugar flavor is delicious.  It's so common for caramel to be paired with sea salt, but butterscotch is equally delicious when paired with sea salt.  Additionally, the flavors of fall are the perfect match for butterscotch.

This butterscotch ganache is so versatile it can be used to drizzle on pies, cakes, cupcakes, ice cream, or mixed into your morning coffee or even used as a filling for cakes and cupcakes.  So many options!   The best part, butterscotch ganache only requires 2 ingredients and can be made in just 5 minutes (plus 2 minutes of prep time).  So simple!  This recipe can easily be doubled for bigger batches.

What you need to make butterscotch ganache

  • Heavy whipping cream.  Use heavy cream or heavy whipping cream.  These items are interchangeable (both must contain at least 36% milkfat).  However, whipping cream contains 30%-35% milkfat making it a lighter product than heavy cream.  Although either will work, I prefer heavy cream for a richer flavor!
  • Butterscotch chips.  The star of the show!

How to make butterscotch ganache

Begin with creating a double boiler (a glass bowl set over a pot with 1 inch of simmering water will work perfectly!).  Add the heavy cream and butterscotch chips.  Occasionally whisk until mixture is smooth and shiny.  Remove from heat and allow to cool before serving.

This recipe will produce a pudding like consistency that is ideal for cake and cupcake fillings and/or frostings (1 part heavy cream to 1.5 parts butterscotch chips).  For a thinner consistency use a 1:1 ratio which is perfect for using as a glaze.  For a thicker consistency use a 2:1 ratio of butterscotch to cream.  This is ideal for making truffles.

Description

Ingredients

Scale
  • ½ cup (113 g) heavy whipping cream
  • 1 cup (170 g) butterscotch chips

Instructions

  1. In a double boiler over simmering water, cook the butterscotch chips and heavy cream until smooth, whisking occasionally.
  2. Allow to cool before using.  For a thicker consistency, allow to set overnight.

Notes

  • Storing:  Keep in an air tight container for up to 1 week in the refrigerator.
  • Baker's Tools: Glass mixing bowls, whisk
  • Prep Time: 2 minutes
  • Cook Time: 5 minutes

    This butterscotch ganache is so easy to make! I used it as a filling in a chocolate layer cake and it was a huge hit!

    Hi, I plan to make the Butterscotch Ganache for the top tier of a wedding cake as requested by the groom.
    I have made ganache in the past and when I want to make it fluffy ... after the chocolate has cooled I use a hand mixer
    to fluff it up. Is that also possible with Butterscotch ??? I have already dumped one batch down the sink as it looked like
    it curled. Can you advise how I could make. your recipe fluffy? please respond to my email address. Thanks
