Crisp Topping
- 140 g (1 cup) all-purpose flour
- 110 g (1/2 cup) packed light brown sugar
- 80 g (2/3 cup) old-fashioned oats
- 50 g (1/2 cup) shredded sweetened coconut
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 140 g (10 tablespoons) unsalted butter, at room temperature
Peach Cherry Filling
- 550 g (4 cups) sliced fresh peaches
- 600 g (4 cups) pitted and halved fresh cherries
- 110 g (1/2 cup) granulated sugar
- 2 teaspoons cinnamon
- 2 tablespoons cornstarch
Instructions
- Preheat the oven to 350°F/177°C. Place 8 (6-ounce) ramekins on a baking sheet and set aside.
Crisp Topping
- In a stand mixer bowl or large mixing bowl, whisk the flour, sugar, oats, coconut, cinnamon, nutmeg, and salt.
- Cut the butter into tablespoons and add to the bowl. Beat on medium speed until a crumble mixture forms.
Peach Cherry Filling
- Add the peaches and cherries to a large mixing bowl and combine with the sugar, cinnamon, and cornstarch.
- Evenly divide the filling between the prepared ramekins and sprinkle the topping over each crisp.
- Bake for 35-40 minutes or until the fruit is bubbly and the topping is browned.
