Description

No-fuss Peach Cherry Crisps are made with fresh sliced peaches and cherries topped with a simple buttery oat topping. Serve this à la mode for the perfect summertime treat for everyday occasions!


Ingredients

Crisp Topping

  • 140 g (1 cup) all-purpose flour
  • 110 g (1/2 cup) packed light brown sugar
  • 80 g (2/3 cup) old-fashioned oats
  • 50 g (1/2 cup) shredded sweetened coconut
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 140 g (10 tablespoons) unsalted butter, at room temperature

Peach Cherry Filling

  • 550 g (4 cups) sliced fresh peaches
  • 600 g (4 cups) pitted and halved fresh cherries
  • 110 g (1/2 cup) granulated sugar
  • 2 teaspoons cinnamon
  • 2 tablespoons cornstarch

Instructions

  1. Preheat the oven to 350°F/177°C. Place 8 (6-ounce) ramekins on a baking sheet and set aside.

Crisp Topping

  1. In a stand mixer bowl or large mixing bowl, whisk the flour, sugar, oats, coconut, cinnamon, nutmeg, and salt.
  2. Cut the butter into tablespoons and add to the bowl. Beat on medium speed until a crumble mixture forms.

Peach Cherry Filling

  1. Add the peaches and cherries to a large mixing bowl and combine with the sugar, cinnamon, and cornstarch.
  2. Evenly divide the filling between the prepared ramekins and sprinkle the topping over each crisp.
  3. Bake for 35-40 minutes or until the fruit is bubbly and the topping is browned.
