Baked Apple Cider Donuts

Description

Baked apple cider donuts are cakey, loaded with flavor, quick and simple to make.  It's a delicious breakfast for any crisp fall morning.  These donuts are coated in a cinnamon spiced sugar topping and pair well with a warmed cup of apple cider or hot cup of coffee.

For the donuts

  • 1 1/2 cups (360 ml) apple cider
  • 2 cups (240 g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 large egg (50 g)
  • 3/4 cup (150 g) dark brown sugar
  • 2 tablespoons (28 g) unsalted butter, melted
  • 1/2 cup (120 ml) whole milk, at room temperature

For the topping

  • 1 cup (200 g) granulated sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 6 tablespoons (85 g) unsalted butter, melted

Instructions

  1. In a small saucepan, bring apple cider to a gentle boil and allow to simmer over medium heat until reduced to 1/2 cup (120 ml), about 20-25 minutes. Set aside to cool.
  2. Preheat oven to 350°F/177°C.  Spray a doughnut pan with non-stick spray and set aside.

For the donuts

  1. In a medium mixing bowl, whisk together flour, baking powder, baking soda, salt, cinnamon and nutmeg.  Set aside.
  2. In a small mixing bowl, whisk together the egg, brown sugar, melted butter, milk and reduced apple cider until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir just until combined.  Do not over mix.
  4. Spoon batter (or use a pastry bag to pipe batter) into donut wells, filling until 2/3 of the way full.
  5. Bake for 8-10 minutes or until a toothpick inserted into the center of the donuts comes out clean.  Allow donuts to cool slightly before adding topping.

For the topping

  1. In a small bowl, whisk together sugar, cinnamon and nutmeg.
  2. Dip each donut into butter and then generously into the sugar mixture.  Best served immediately.

Notes

  1. Storing:  Cover tightly and store at room temperature up to 2 days.  Alternatively freeze for up to 2 months.  Thaw overnight in refrigerator and serve at room temperature.
