With it being well into July already, summer is flying by. Although I love cooking and baking, in the summer months, I enjoy making simple, light and delicious recipes that allow more time to spend outdoors enjoying the warm, sunny days. There is nothing like a fresh salad bursting with seasonal flavors. It is perfect for a healthy lunch, picnic in the park or even entertaining at home.
Since the days have been consistently hot, salads have been a staple in our household. It is easy to mix in fresh ingredients and toss with a simple vinaigrette and Voila…dinner is on the table. Often, I love to boil pasta and toss it in a salad along with a protein to make it more filling. The variations are endless.
This summer shrimp orzo salad, is colorful, fresh and filling. It can be served as an entree or a side dish. It is perfect to take to a summer BBQ or serve up for dinner. Corn is at its best in the summer and in this recipe it adds a crunchy element. Salty feta cheese compliments the crunchy veggies in this salad and everything is brought together with a simple lemon vinaigrette. If you are not a fan of shrimp, it can easily be substituted with another protein such as chicken or salmon or even omitted entirely.
