Strawberry shortcake biscuits are flaky layers of biscuit layered with juicy, sweetened strawberries and fresh whipped cream.  Simple homemade buttermilk biscuits are easily assembled into a memorable summer dessert.

For the biscuits

For the strawberries

  • 1 lb strawberries, sliced 1/4″ thick
  • 2 tablespoons granulated sugar

For the whipped cream

  • 1 cup (240 ml) cold heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon pure vanilla extract

For the biscuits

  1. Follow directions to make homemade buttermilk biscuits.  Use a 3″ biscuit or round cutter to cut biscuits.  Before placing baking tray in oven, sprinkle biscuits with coarse sugar.

For the strawberries

  1. In a medium bowl, mix strawberries and sugar.  Set aside for 15 minutes or place in refrigerator for up to 24 hours.

For the whipped cream

  1. In a large bowl using a hand-held mixer or stand mixer with the whisk attachment, whisk the heavy cream, powdered sugar and vanilla on medium-high speed until soft peaks form, about 3 minutes.  Careful not to over mix or else it will become thick and lumpy.

To assemble shortcakes

  1. Slice biscuits in half.  Top each bottom half with strawberries (and their juices) and then a dollop of whipped cream.  Cover with top half of biscuits.  Serve immediately.
