Description
Strawberry shortcake biscuits are flaky layers of biscuit layered with juicy, sweetened strawberries and fresh whipped cream. Simple homemade buttermilk biscuits are easily assembled into a memorable summer dessert.

For the biscuits
- 1 recipe homemade buttermilk biscuits
- Coarse sugar, for sprinkling
For the strawberries
- 1 lb strawberries, sliced 1/4″ thick
- 2 tablespoons granulated sugar
For the whipped cream
- 1 cup (240 ml) cold heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon pure vanilla extract
Instructions
For the biscuits
- Follow directions to make homemade buttermilk biscuits. Use a 3″ biscuit or round cutter to cut biscuits. Before placing baking tray in oven, sprinkle biscuits with coarse sugar.
For the strawberries
- In a medium bowl, mix strawberries and sugar. Set aside for 15 minutes or place in refrigerator for up to 24 hours.
For the whipped cream
- In a large bowl using a hand-held mixer or stand mixer with the whisk attachment, whisk the heavy cream, powdered sugar and vanilla on medium-high speed until soft peaks form, about 3 minutes. Careful not to over mix or else it will become thick and lumpy.
To assemble shortcakes
- Slice biscuits in half. Top each bottom half with strawberries (and their juices) and then a dollop of whipped cream. Cover with top half of biscuits. Serve immediately.
